Screening Cemaran Bakteri Susu Segar Di Kampung Melayu Jakarta Timur

Milk is a very nutritious food. Cow’s milk is consumed by the majority of Indonesians. Cow’s milk is more commonly taken than goat’s or horse’s milk due to habit and market availability. The majority of individuals drink milk without understanding how much bacteria it contains or whether hazardous bacteria are present. The goal of this study is to count the amount of bacteria in cow’s milk in Kampung Melayu, East Jakarta. Milk samples were collected from cattle breeders and milk selling stalls in Kampung Melayu, East Jakarta. Using plate count agar, samples were tested to identify the total bacteria in each milk. Ten samples were examined. The findings of the sample investigation revealed that the total number of fresh’s milk bacteria in seller 1 was 1.0 x 106, in seller 2 was 1.0 x 106, in seller 3 was 3.4 x 106, in cattle breeders 1 was 4.9 x 106, and cattle breeders 2 was as much as 1.4 x 106. So some milk from merchants fulfills the standards, while some surpass the requirements of the Indonesian National Standard (SNI) 3141.1:2011, which is 1.0 x 106 CFU/mL.
Susu merupakan bahan makanan yang bergizi tinggi. Sebagian besar masyarakat Indonesia mengkonsumsi susu sapi. Susu sapi lebih banyak dikonsumsi jika dibandingkan dengan susu kambing atau susu kuda karena faktor kebiasaan dan ketersediaannya di pasaran lebih banyak. Mayoritas masyarakat mengkonsumsi susu tanpa mengetahui seberapa besar jumlah bakteri yang terkandung dan ada atau tidaknya bakteri berbahaya dalam susu yang dikonsumsi. Penelitian ini bertujuan untuk mengetahui cemaran bakteri susu sapi segar di Kampung Melayu Jakarta Timur. Sampel susu diambil dari peternak sapi yang menjual susu segar dan warung penjual susu di Kampung Melayu Jakarta timur. Sampel diperiksa untuk mengetahui total plate count/ TPC bakteri dari masing-masing susu dengan media plate count agar. Jumlah sampel yang diteliti adalah 5 sampel yang diambil sebanyak 2 kali. Hasil pemeriksaan sampel menunjukkan bakteri susu segar rata-rata jumlah bakteri susu pada penjual 1 sebanyak 1,0 x 106, pada penjual 2 sebanyak 1,0 x 106, pada penjual 3 sebanyak 3,4 x 106, pada peternak 1 sebanyak 4,9 x 106 dan pada peternak 2 sebanyak 1,4 x 106. Jadi untuk beberapa susu dari penjual memenuhi persyaratan namun adapula yang melebihi persyaratan yang ada dalam Standar Nasional Indonesia (SNI) 3141.1:2011 yaitu 1,0x106 CFU/mL.
